Has there ever been a list of TOS stunt persons?

A thread or website or list of the TOS stuntmen and stunt actors?

Individual episode entries at Memory Alpha sometimes list stunt people when known also, so you might try searching manually that way.

Jay Jones is the big name. I think they have rules today saying you can't use the footage if a stuntman gets seriously injured, but not back then. Jones got hurt on "The Apple" and "Who Mourns for Adonais," and the stunts stayed in.

Jay was pretty daring. That full face fall from the transporter platform in "Catspaw" was impressive, you can't see him break the fall.

At the risk of being too marginally on topic, and because everybody needs a little more Sparks in their lives, there is my favorite song about Hollywood stunt performers.
