Office Lunch Ideas? (Sick of sandwiches)

A very common solution I've seen among my work colleagues involves fresh salad (greens, some cherry tomatoes, a few pepper slices), a small drop of olive oil, and whatever youlike to garnish with it (pasta, rice, cubes of the meat of your choice, etc.). Made up in about 10-15 mins, keep it in a suitable container in the fridge overnight, then remove in the morning and take with you. :bolian: (If only I was that organised... I end up buying the damn things instead. ;))

Yeah, it's usually a great idea. I'm a great fan of big salads, they are healthy, tasty and you don't fall asleep at the desk trying to digest them. You can vary your recipe from day to day: you can add carrots, onions, olives, tuna, various cheese (fontina, mozzarella, parmigiano, feta, etc), ham, wurstels, the combinations are endless. Your health will thank you.
Sold. I think I'm going to do salads from now on and maybe pita wraps to mix it up a bit. Problem is going to be finding a big enough container to hold a salad that will actually fill me up. Also, what kind of meat do you use? Pre-cooked? Or do you make it the previous night? Any product suggestions?

You can pre-cook your chicken the previous night, and cut it into strips to put in the salad. You can probably find pre-cut, pre-cooked chicken in the store for this purpose also. Beef tips, or thin slices of pork loins work well too. I've also been known to throw some Spam in a salad on occasion. I also like to replace the chicken/ other meat with thick pieces of cheese, like Montery Jack, or mild Cheddar, or Mozzerella, placed in the salad right before I eat it.

I've found that it's fine to make the salad the previous night, as long as you keep it sealed, and away from any wet ingredients, like dressings, or moist veggies, until you are ready to eat it, or at least until the morning you take it. It also helps not to wash the salad until you're ready to eat it, or, again, until the morning of, so that it doesn't get too soggy and wilted. Maybe keep a small salad spinner in your desk for this purpose. This is just what I've found works best for me though. I'm sure others who are more salad-ly inclined will have better advice. :)
 
Try the Chef Boyardee variety pack (Beef Ravioli, Beefaroni, Spaghetti & Meat Balls, and Lasagna). Toss in a cup of fruit/applesauce, chips, and some cookies. Takes almost no time to prepare and doesn't require refrigeration.
 
Just vary whatever you do. Even sandwiches don't have to be the same old same old. And, as a service to others, don't bring in anything that's going to smell up the work area. ;) Honestly, it's a consideration to take into mind, especially if you don't have a lunch area to go to. I love chili, I love curries, but I'd never bring either to my office.
 
My office feeds us pizza on Fridays, so there's one less day to worry about. I tend to go the sandwich or leftover route too. It's inexpensive and healthy. I don't want to eat a belly bomb and feel like crap at my desk all afternoon.

When I feel bored with my lunch, I'll pick up a little something to go with it, like a bowl of soup or some potato salad.

I also like to go out to lunch one day a week. It's nice to get out of the office for a bit, and I work hard all week, why not treat myself a little bit once in a while.
 
I LOVE sandwiches. But I vastly prefer a hot sandwich. My breakfast yesterday consisted of: 2 slices "Outnut" bread, 3 slices lowfat turkey bacon, 1/2 teaspoon light mayo, 2 tablespoons spicy guacamole, thin red bell pepper slices and one slice of provolone cheese. DELICIOUS!

I don't have a kitchen at work though so I tend to go out for lunch unless I have leftovers.

HOWEVER, I can be creative on the odd day to save money. Try the following:

- 1/2 can vegetarian chilli (Stagg preferably), and some 3 cheese tortellini... Mix the two in a rubbermaid before you go to work and nuke it in the microwave for lunch.

- Salad: use bagged salad of your choice and add, 1 hard boiled egg, small chunks low-fat aged cheddar, grape tomatoes, cucumbers, low fat italian dressing and sunflower seeds.

- Make sure you eat lots of fruit... I bring at least one apple and a banana to work everyday. Try also a small amount of almonds as well.

- Subway is cheap and you can get a hot sandwich there.

- Mcdonalds: Quarter Pounder (no cheese) and no fries with a diet coke.
