Of course, were I to make these, it'd be with traditional frosting as I'm not a fan of fondant.

Those are cute, but they seem like way too much work. If someone else wants to make them, I'd definitely be supportive.
 
I may try baking up some TNG-themed cookies for TNG's 24th anniversary later this month. I'll probably use a simple gingerbread man or other "person-shaped" cookie cut-out to do and a simple cookie frosting traditionally used for sugar cookies as opposed to fondant which can taste like slightly sweet drywall spackle.
 
Cool! I've never used fondant--what's it like to work with, is it really finicky and tempermental?
 
It's pretty easy to work with, easy to cut and shape and takes on dye/color pretty well. So long as you don't add too much liquid dye or overwork it fondant pretty much can be cut, shaped and applied a lot like linoleum.

The problem is that in most cases it tastes just as good.

I love sugar cookies...but no way would I make those.

I suppose you could make simpler, generic Ensign Redshirt cookies for eating. As one commenter on that blog pointed out, the redshirts would be the first to get their heads bitten off anyway.
