I liked the "Breaking the Ice" episode. It felt like a prequel, and it didn't involve the "Temporal Cold War."

My daughter liked "Breaking the Ice" as well and it may be her favorite of season 1. Personally, my favorite is "The Andorian Incident" (a close second would be the pilot "Broken Bow"). Love Jeffrey Combs as Shran as well as the plot which sets the direction for the controversial Vulcan leadership arc later on.
I really liked "Strange New World" from the first season, it had great visuals and I really enjoyed Kelly Waymire 
The pilot Broken Bow was very good, though in retrospect it was a mistake to go all the way to Kronos in the first episode.
Breaking the Ice is great. And I love that although ENT was derided for having action, one of the best and most liked episodes involves almost nothing "happening" except character development and space exploration.
Shuttlepod One is the other I'd rank at the top, mostly because it's about the relationship of two of my favourite characters (very well written banter), but I also like the story mechanics. The "lost boat" concept has been done before, but never better.
And there are some other good episodes, but overall I'd put Breaking the Ice at the top.

RIP Kelly! I enjoyed her on Enterprise. She would have been a great recurring character too.

Off the top of my head, I'd say The Andorian Incident and Shuttlepod 1
"Fallen Hero" might be my favorite from the season. It's a good encapsulation of the Vulcan/human relationship theme the season had going on. The lead guest actress was quite good, she had some good dialogue with Archer and T'Pol, the chase scenes were nicely done. I like the episodes where our heroes seem hopelessly outmatched.
After that, probably "Shockwave". I don't usually like cliffhanger ending of the part 1/part 2 sort, but most of the episode was a good conclusion for the season and its various threads (mostly the disproving Vulcans and Temporal Cold War/Suliban shenanigans). "Breaking the Ice", "Fusion" and "Civilization" were also fun. I like a fair number of episodes from the season, probably more than most people do.
After that, probably "Shockwave". Top for me was 'Cold Front' - even though it ultimately ended up feeling kind of pointless in the context of the series as a whole which was a let-down. As a standalone, it really felt like the mystery and danger behind the temporal cold war was being ramped up and really set up some lovely mysteries and intrigue.
2-5 for me would be:
2.) 'Broken Bow' - great pilot. Felt fresh and new and loved it as a set-up. Probably the best pilot IMO
3.) 'Silent Enemy' - slightly dodgy sub-plot involving Malcolm's favourite food, but otherwise again this episode really made early space exploration feel dangerous. Our crew were out of their depth and on the run.
4.) 'Fight or Flight' - putting in a plug for this one too. I felt it embraced the same ideas I loved in 'Silent Enemy' with our crew not having the best ship, the best weapons or technology. No UT. Hoshi's journey was a little 'lesson of the week' but I liked her arc here and was rooting for her when she finally found her confidence when faced with the challenge of having to speak to the alien.

The Andorian Incident is my favorite by far. That's the first episode I remember being really blown away by.
I'm trying to keep up with the re-watch Trek.fm is doing (I'm way behind at this point), and I'm just wrapping up season one of ENT. Most of these episodes I haven't seen in at least 12 years, and although I was always a fan of the show, I'm surprised at how much better it is than I remembered it. My favorites:

Carbon Creek, T'Pol tells an interesting story of her ancestor encountering humans in the 1950's. For some reason, the way the story ending I believe it was her who actually experienced that mingling with humans.
Ooh I like this.
It's how I watch this episode and I to myself say it was T'Pol.
