Enterprise, "In a Mirror Darkly" 2 parter.
Voyager "Remember" was on TV. Some people criticize it because it doesn't really concern itself that much with Voyager or our characters but it told an interesting story well and it was really quite emotional. It also gave us a good sense of how devoted to justice and fairness B'Ellana was as does her being in the Maquis.
The last episode I watched was 'Operation:Annihilate!"
I've been watching the episodes that the IDW's Star Trek Ongoing Comic series has adapted into the 2009 movie timeline, just to compare the differences between the two.
TNG - "The Mind's Eye"

TOS-Balance of Terror, just today. I've been rewatching the originals one at a time a week apart in an effort to "recreate" the viewing experience of a 1966 viewer. We've been running "comment" threads over at Starship Modeler with all participants commenting as if it were 1966!
Enterprise season 4 episodes, the Vulcan trilogy, and Deadalous.

The last episode I saw anything of was "The Man Trap", the classic series episode that started it all.
"Return to Tomorrow" (TOS). Ah...the classic "Risk is our business" speech.
Arena and The Alternative Factor, both cracking good stories.
Enterprise season 2 Minefield and Dead Stop.
TNG Season 3 'Hollow Pursuits' on BBCA. Barclay is one of the best characters.
