I may have spelled this wrong, but what is lamestine, or Lamb is teen?

Craig uses this unfamiliar word in the Lodger, after the bumpy mind meld, as he blurts out the Doctor’s non technological contraption, and is promptly hushed.

I have puzzled this for years.

He says, "You're using the non-technological technology of Lammasteen!" He doesn't blurt out the word senselessly.

Some lifetimes ago, the Third Doctor created a scientific gizmo out of stuff like a cork, a wine bottle, and a cup of tea leaves. I always wondered if that was somehow related to the Lammasteen tech.
