Epsilon Eridani appears on several display readouts in TNG, and a planet orbiting it was discovered in 2000.

I don't know that any of the others have been mentioned in Trek.

There's also the problem that not all stars mentioned in Trek correspond to known stars, and it's a possibility that the different Rigel planets named in various episodes may not all be orbiting the same star Rigel.
