In the movie, it looks tiny initially. But, then we see what looks like a dozen or more shuttle craft leaving it. I don't think that even the E-D had this many shuttle craft.

Later, we hear that Kirk's father saved 800 lives on the Kelvin -- which is about twice as many as the regular timeline TOS enterprise.

Thats the issues of TV budgets. The main shuttlebay of the E-D was never shown, but had it it would have had a massive amount of shuttlecraft since the bay took up almost the entire deck it was located on in the ship

That being said, the Kelvin like the Enterprise seems to be big ships.

Judging by the size of the bridge window I'd eyeball Kelvin at a little over three hundred meters long, with the saucer being about 150 in diameter. They probably packed it in a bit, but then, this is a survey ship. I think in classic trek producers routinely under-estimate exactly how much manpower it would really take to survey let alone fully explore an ENTIRE PLANET with just the resources on your starship; it's not something you could do with five redshirts and a wisecracking doctor on some randomly selected garden spot in one corner of one continent.

On the other and, baby Jim was (about to be) there, so it's a safe bet that not all of those 800 people were Starfleet officers.
