Its my guess that this would have occurred in Archer's time, Kirk's perhaps... maybe Voyager. Anytime a ship goes out of Earth's comfort zone, there is a chance someone will fall ill to it. I was just thinking about it, and thought I'd pose a discussion.

The replicators caring deserts ... the holodeck, ten forward, recreation room... exct. Obviously it was prevalent to warrant better improvements. (might even be why a ships counselor and families were on ENT-D)
 
STAR TREK: The Motion Picture probably started to suggest that Starfleet was concerned about its crew feeling cut off from Earth and you see that in certain aspects of the film. Like on the Recreation Deck, for example, birds are singing. There is definitely a standard uniform, but the crew also has more casual variances to mix and match, with the intent, perhaps, of recreating that "Comfort Zone," as you call it, which existed back home. The quarters are also more spacious, allowing for a homier atmosphere, when they are off-duty.

The magic of the holodeck is one which I know would not have gone uninvented in STAR TREK's world, but I really don't care for how over-used it was. Whether it was intended to be a handle for crews to hang onto reality, or not, I can't be sure, but it's overuse and abuse permeates the 24th century franchise. Personally, I would've reserved holodecks to Starbases, and similar facilities. I don't believe they belong on a starship, but ... that's what happens when control of the franchise is in the hands of those holding the receipt for it ...
 
"The Cage" already showed people in casual clothing wandering about on the corridors of the starship whose skipper hated being in space; the thematique may have been there from the very start. Mess hall scenes were also common in the earliest TOS episodes, with communality and camaderie on the forefront.

Recreation rooms in TOS might have been more modest than certain later incarnations, but there were frequent dialogue mentions, including to great numbers of such rooms, and to Rec Room Three spanning three decks (perhaps the ST:TMP facility was there all along?). And towards the end of the show, we got glimpses of the arboretum, and of other spaces with floraic pleasures - a new standing'ish set to that effect was also created.

And of course TAS gave us the early onboard VR environment, but refrained from using let alone abusing it. Such things might well have been aboard Kirk's ship back in the early days of TOS already. Or Pike's, or Robau's. After all, there's nothing particularly futuristic about them from our POV, and in the Trek universe, such technology was for mankind to take from the Xyrrillians of ENT "Unexpected" already.
