A couple things of recent really stood out, and I don't mean Philips head screws because that's just going to be a given. I'm talking the shrouded fun stuff you won't see unless you're distracted and/or bored at just the right moment:
In "Timescape", the side door to Engineering is fully open for long enough to notice there's a Jeffries' Tube hatch that leads... into the wall since the main bulkhead to the outer corridor is right there on the opposite side! So much for thinking that doorway was to a turbolift or toilet where someone who drank too much hot chocolate and spilled it everywhere could go clean up or something...
in "Remember Me", when the portal is opened on the bridge and Dr Crusher is almost sucked in by it, you can see the bottom of Data's console and it's got paint peeling off all over the place. The blu-ray reveals a lot more than you'd expect, and it's part of the fun.
"Ship in a Bottle" reveals way too easily the black felt with yellow masking tape used to decorate the holodeck with. (Never mind the plot hole that the holodeck was acting up before Moriarty had a chance to escape, but I digress...)
A few times where the Engineering room with the pool table prop has said prop removed and room redecorated to be a larger junction between corridors for other decks, most recently of which was in "Liaisons", but they've done that a few times before too...
