If you could choose one ship out of all the Federation ships, which one would you choose? Or any other Trek ship. Why the hell didn't Janeway have Belanna make a cloaking device? I don't think the Romulans would have noticed 70,000 light years away.
The Defiant would have kicked ass, but it would have been very uncomfortable.
The Sovereign would have increased firepower and seemed to have all the comfort of the Galaxy class.

^It was "largest" only in length, and not by much. Less decks, and, as you say, a lot less volume.

And the weapon system might not be the thing that is "the most advanced in the Fleet" about the E-E. Indeed, it seems to be more cumbersome than the E-D suite, with more emitters and muzzles for at most the same effective firepower.
As WalkingMan already said at the beginning of the thread, Starfleet apparently believed that the Galaxy class was ideal for really deep space exploration, at least until "Encounter at Farpoint". In contrast, whenever the deep space abilities and self-sufficiency of our favorite Interpid class vessel were commented on, the VOY heroes lamented rather than praised. Difficult to say where Sovereign would fit in, but the suitability of the Galaxy seems well supported.
