Me first !!

TOS: Spock, but of course the big three were king.
TNG: Picard, but I always had a crush on Shelby.
DS9: Woah, that's difficult. So many amazing characters, there. I'll say Garak, then Odo/Quark and Sisko/Dukat. Hell, even very minor characters could qualify.
VOY: Well I didn't watch it much, so I can't say. But I do loathe Janeway with a passion.
ENT: Hoshi, I guess. The character's concept was really cool; it's just a damn shame she wasn't given anything to do after the first season.

You can name villains and characters from movies, etc.

TOS: Kirk, Spock or McCoy, depending on the episode. I really liked Scotty, too (except in episodes where he falls in love, where he was just embarrassingly awful).

TNG: Oddly (considering that, at one time, it was my favorite Trek), by the time the series ended, I had decided that none of the regular characters were people I'd really want to spend any time with. I liked Miles O'Brien pretty well; he seemed like a solid, down-to-earth kind of guy. Plus, Colm Meaney actually had quite a bit of non-geek cred from his film work.

ENT: Hoshi. Based on absolutely nothing other than sheer yum factor.

TNG was tough. While I like the ensemble, the individual characters are all kind of meh.

It's hard to narrow it down but here goes:

TOS: Probably Bones but I love them all and I don't have a very clear favorite.

TNG: Riker is my top pick. And then I like everyone else EXCEPT Worf.

DS9: Bashir. Definitely Bashir. Garak too. But leading by a landslide is Bashir. Did I mention I love Bashir?

VOY: Tom Paris all the way.

ENT: Haven't watched it enough to pick.

I only watched a few episodes of DS9 and VOY and didn't like either series.

That's a shame. DS9 built a really interesting cast of characters and story... but you have to wait for the second season for things to really get started.

I gave Voyager two seasons to make something happen, and gave up on it.
