Just how big is she meant to be in this film? This promotional site: http://www.experience-the-enterprise.com/ww/ puts her at about 762 meters in length. I know they had to pack that refinery in there but that would make her the largest Federation starship ever.

Maybe they realised the ship would have to be a bit bigger tha it was and used the opportunity?

It is huge, but it is huge for the universe we're used to. In the alternate reality that is created in the movie we might assume that the Federation will build, as a standard, way bigger starships. As for the right dimension, there was some discussion about it in this discussion thread about the new ship.
Seeing how huge the Nerada is (5km?), it might well be that the Federation would think about having to face bigger ship as a standard, and thus increasing his design dimensions as a response
