During The Ship, if a Founder was killed under the Jem's watch-they committed suicide but in WYLB someone said, if the Founder died they'd fight to the last man?

Last standing orders would be my guess. If your God tells you to fight to the last man rather than commit mass suicide, chances are you'll do it.
 
I would guess because the Founder in "The Ship" wasn't actually killed, it just died, whereas the Female Shapeshifter would have been killed by Solids.

When the Jem'Hadar allow a god to die, they commit suicide. However, if someone kills one of their gods, they seek revenge.

Yes- Founder in the Ship died, so they "failed" to rescue her since they should've been faster, better, whatnot. Why they didn't beam her out... never mind, shhhh! Tho they may have to commit suicide instead of spreading the fact their gods can die around. But mostly suicide for "failure" and in "grief."

In WYLB it was a matter of orders- they'd fight to death because they were told to fight until the order was recinded. And if she had died without doing so, they'd fight on- like suicide but taking your enemies with you.
