Do people under 40 care about Star Trek?

this is why Year One series might actually be a good idea. I love TOS , but it is not very accessible to young people these days.
I'd like to see it too, but we're kidding ourselves to think that any new Trek TV show, however much we might enjoy it, can change the downward trajectory of the franchise by bringing in many new viewers. Due partly, but not wholly, to the streaming distribution model, these are targeted niche productions reaching a few million dedicated viewers.

Not gonna change the course of mighty rivers.

The last version of Trek that had any "foundational*" impact on Star Trek was TNG. Forty years ago.

*Probably not the word I want, but I can't think of another.

Interesting stats:
Nielsen Gauge viewing share breakdown
Streaming = ~47% & Growing
Cable = ~21.2% & Declining
Broadcast = ~21.5% & Stable
Other (DVD, gaming, etc.) = Variable (Gaming share increasing within this category)

The Media landscape seems very fragmented at this point in time, much more so than in the past.
