Yeah, that is a tough one. I'd probably pick the Enterprise E. It was the most modern ship we've seen. I think being on anything else would be like sailing on an old steam ship when a state of the art luxury ship was available.
I can't think of any particular mission to be on. Just being on it would be a thrill. Truthfully, I could do without the Borg, or even the Remans. That would just add so much stress that I wouldn't enjoy myself. Just a nice cruise around the Federation would be nice. I'd love to hit the hot spots like Vulcan, Risa, 24th Century Earth, etc.

All good choices, however, my ship of choice would be "Relativity" from the 29th century. Having the ability to not only to travel in deep space, but also to be abel to control time (to a certain extent) would be an added bonus. The only other ship that come to mind would be Annorax's out of phase ship, that would not be an option though, Annorax was not the type Capt that I could respect or serve under. So, my ship of choice would have to be Relativity...
In the canon Trekiverse I would agree totally with this. DS9 is the place to be!
If I could serve somewhere in my fanfic universe, though, I would want to be part of the Thirteenth Order and serve aboard either the Trager or Sherouk: Cardassian warships, of course!
Canon Trek: NX-01. I like the look and feel of it; I also like the armory section and engineering in general. And the uniforms were HOT.
I wouldn't mind being on the Enterprise though, either, but somewhere before First Contact, then getting off before the Borg came :P

I'd pick to beam and replace Robert April as the first Captain of the Enterprise.
