Cool parts of the movie we didn't get to see...

I would have liked to see the Narada battle the Federation ships over Vulcan before the Enterprise arrives. It wouldn't have been a long scene seeing as how the Enterprise was only minutes behind.

Anyone agree or have something that happened off screen you would have wanted to see?

It would be cool to see a deleted scene of the complete battle, but I think the movie works best with it kept off screen.

As for other things, I was really hoping to see more of Kirk and Spock's Academy years, and some of the actual training that goes into becoming a Starfleet officer (besides just taking the Kobiyashi Maru). I certainly didn't want a "Starfleet Academy" movie or anything, but it would have been nice to see more of the Academy than just people walking around a campus.
