Isn't it TNZ's establishment of 2364 that lets us actually date all of Star Trek from before that point?

Didn't they also establish McCoy's age as 130 in EaF? That alone should establish the show 90-100 years post-TOS.

137 years old as of the TNG premiere I think it was, and a reference from Data meant to imply it's been around 70 years since a total breakdown of a starships operations being the Excelsior sabotage of 2285.

The Neutral Zone in season 1 finally gave 2364 as the current year, that Encounter at Farpoint was the start of that year.
