No, none of them do.
"One Little Ship" is mostly set on the Defiant and deals with the Jem'Hadar after they have captured the ship and deal with their captives.
"Statistical Probabilities" has nothing to do with any attack. What I think Navaros is referring to is a scene where the Jack Pack is shown a recording of a negotiation between Weyoun and Sisko.
"In the Pale Moonlight" once again shows a recording but this time it is between Weyoun and Damar as they discuss a future military operation.

The problem is that there are few Dominion recurring characters apart from Weyoun and the Female Founder and both were more on the political leadership side of things rather than military unit command during the war, so you don't have many reasons why you would see a Dominion ship's bridge. Instead we see Weyoun and co observing and commanding fleets from operation centres either on DS9 or back on Cardassia Prime.
So in the end what we see of Jem'Hadar ships is usually due to when our heroes are onboard, which happened in four episodes.
are we ever shown the dominion shipyards or is it only just mentioned?
Yes, in the opening two parter of season 7 one of the plots is arrayed around Martok leading a mission to destroy the Dominion's Monac IV shipyards...and by Dominion's I mean Cardassian as the design was clearly that of that species. We see a few ships in drydocks during some of the shots of the facility, which is quite massive. For the Federation we tend to just see a single drydock on their own but for the Monac IV shipyards we had several large circular stations, with long spines running out and hanging under the spines were drydocks.
Also in season 7 we see a "repair station", which I think was a reuse of the shipyards of Monac IV but just the circular section. All we see is a Jem'Hadar attack ship docked to the outer edge.
These stations were also used in the final episode were several were shown in orbit of Cardassia Prime.
