There are a lot of "The Art of..." books for games out there, mostly filled with a selection of concept art. What about actual "Behind the scenes" or "Making of" books, that describe more technical aspects of the game creation? Are there any?
While not technical, if you are looking for "inside story" kinds of books, Masters of Doom is one of the better ones. It traces the history of id Software from its early days up through the Quake years. It's nothing earth-shattering but it's a good history informed by the people who actually lived through it (Carmack, Romero, etc.)
More technical books on the background of making games probably aren't made often because they would sell poorly--people either want the drama or they want clean technical details, but not both in the same book.
