Anthology series movie ideas

As far as I know, there are three movies planned (so far) in this series: Rogue One (the story o the theft of the Death Star plans), something with Han Solo, and who knows what else. So, let's discuss what would make good/interesting stories in this series.

Here are a few ideas my kids and I have tossed around:
It seems reasonable that the Han Solo movie might include the meeting of Chewie and Han and maybe the legendary Kessel run as part of a larger plot involving some smuggling adventure. Since we know that Bobba Fett and Han have history, adding him into this movie would be a logical and welcome addition.

I think a movie going way back in Yoda's past would be interesting. Perhaps something about his training as a Jedi or some crisis he dealt with when he was a young spry 150-year old.

While this may be too close to the main story line, a movie about Palpatine's conversion to the dark side could have some potential.
 
Young rebel recruits a crippled old Mace Windu from the depths of Coruscant to help him gather the last surviving Jedi together in order to help the nascent rebellion in its hour of greatest need. Vader and Boba Fett to appear. (spoiler: All the Jedi die in an Alamo-esque standoff in order to save the leaders of the Rebellion and kickstart it into a serious movement.)
 
I'd like something between Episodes VI and VII...just because there is so much unexplored time there, and by the time of the third Anthology, Episode IX should be out.
 
Something focusing on the Jedi of thousands of years in the past, with more primitive conditions and other users of "The Force" treating it more like sorcery... a la the "Tales of the Jedi" comics.
