Learning new things is normal. We always learn new things, so I don't see why they/them for individuals should be any different. I've always used they/them if I didn't know anything about someone, to use it for an individual whom I am acquainted with is no issue at all.
If you don't want to be a bigot you'll listen to the individual that you're talking to and use the pronouns that they state are their pronouns.
