Not Amish, but in Burning Dreams there is a group of people in the 23rd century (on a colony world at that) who intentionally limit themselves to 20th century technology.
Also not Amish, but who can forgot the Neo-Transcendentalists of TNG's "Up the Long Ladder," or the colonists in DS9's "Paradise?" Is there an echo in here? Kor
Spoiler: In case this is story idea territory Their having emigrated to America for religious freedom (and they continue to start new settlements - one recently in PEI) makes it a natural extension for them to later be ideal interplanetary colonists as well.
