Star Trek II - the Reliant's explosion and rapid reformation into the Genesis planet was certainly scenic to look at.
Star Trek III - the Grissom's destruction was sparkly and pretty, like a blossoming flower.
Star Trek III - the Enterprise destruction certainly looked unique and acrobatic
Star Trek TNG's "Contagion" - when the Yamamoto blew up like a shiny new star. Then its saucer section immediately incinerated.
Star Trek DS9 - countless episodes with countless Klingon & Dominion battle explosions, too many to keep track of.
Star Trek First Contact - the Borg cube explosion, whose shockwave annihilated one of the Starfleet ships that was too close to it at the time.
Star VOY - Endgame, the way that entire Borg-city space structure blew apart in one explosion after another.

    I said out, dammit!
Yesterday's Enterprise, when the K'Vort's shields suddenly collapsed with a firy ragged edge, it blew, and the ship behind it flew thru the fireball.

The destruction of General Chang's bird of prey, a series of explosions ending in the blowing up of the head.

Yes it was reused, but the doesn't down grade the original.

The fun really begins at 2:08 but if you fast forward to it, you miss out on Data's toilet word... :(

I forgot the episode title, but I assume this was the one where the Enterprise kept going through that time loop that kept resulting in the Enterprise colliding with another ship and blowing up?

I thought that the destruction of the Europa in Battle of the Binary Stars was great in terms of its monstrous scale.

I'm also partial to the destruction of the Genesis Planet too - the sunrise over a burning horizon, followed by the prominence of lava erupting towards the Bird of Prey. Very pretty.

I liked the attention to detail in the dying Genesis planet eruption, the way you could see all the individual lava rocks swirling and tumbling on their trajectories. I just wish they had shown its star going supernova (which must have happened, given the protomatter problems) and utterly blowing the planet away like a candle in a hurricane.

I forgot another: the Star Trek II explosion when the Enterprise blows the Reliant's left engine nacelle off just as neat as you please.

And while this doesn't count as an explosion, per se, in TMP I liked how V'Ger's energy bolts gobbled up the Klingon ships. Also just as neat as you please.

    From around the 2:42 mark.

Poor Captain Sisko. I believe he was quite fond of that ship.

I tend to dislike 90% of sci-fi explosions in space because they're unrealistic and I think something more accurate could look incredibly cool.

The "There Is a Moment" docking scene in Interstellar gets about as close as can be. The flame is extremely brief as it should be as the gas flow would end abruptly, and its mostly debris everywhere after that.

So, the ship should really just erupt in a much bigger white mini-supernova of antimatter or something, and clearly the model here suddenly stops rotating and cuts to, like, a Tonka truck packed with fireworks or something...but Q(!) I still love this freaking explosion.

    Shocking moment.
