I use the gray theme. When reading just a post here or there the colors don't make much difference to me, but if I've been browsing the boards for more than 5 minutes or so, the blue themes start to put strain on my eyes. I have used monitors, though, on which the gray looks much darker and where with the New Blue theme everything looks almost black.
Big Blue. I wasn't around when it was apparently the default on Trek BBS, but I love it. I find it easier on the eyes than New Blue and Old Gray, especially when I've got f.lux running (which adjusts your monitor's color based on the time of day, really cuts down on the harsh blue).
Pink is where they keep all teh gays! The missing evolved humanity gays we all just know are there, somewhere, in Star Trek.

Pink gets the short shrift in Trek. Did Jake Sisko ever wear pink? I don't think so despite his godawful wardrobe. We hardly saw any pink and did we EVER see a male wearing pink? I seriously doubt it. Someone, provide me with evidence. It seems that humanity has evolved past pink
I'm partial to Fuschia so I'll take your Electric happily. Just so everyone knows, salmon does NOT count. I know there were some Star Trek villagers wearing salmon burlap at some point and I hope no one intends to offer that up as evidence of anything other than the 90's.
New Blue hurts my eyes. I voted for Big Blue, because that's what I'd been using, but this thread just inspired me to try Old Grey. I like it! Easy on the eyes.
Oh geez...there are two puns fighting it out demanding that I think them...should I mention about how I quickly got "board" with the Blue theme, or respond to teacake's mentioning of salmon with a suitably placed fish pun? These are the thoughts that kept me out of the really good schools.
