She took command in TAS' "The Lorelei Signal' but, yeah, it would have been nice to see it at least once in TOS. "The Cage/Menagerie" estabished a woman could command so it would have been nice to have reaffirmed the idea onscreen later during the series. It also would have been nice to see a woman starship Captain or Commodore or Admiral to realy nail down the idea.Uhura take the conn (although I want to say there was an episode or two where it could’ve been interpreted she was in command from her communications console)

That's actually something I hoped to see during the remastering back in 2006 and was disapointed when it didn't happen. It's not like it was Star Wars, where the latest remaster became THE version. We still had TOS with the original effects. One more Starfleet starship design, for a bit of variety.
At least one more two-part episode.

I don’t recall if she actually sat in the chair, but I do recall her informing Scotty she was taking command. Then she lead a landing party to the planet surface to rescue Kirk and company.I've only seen it once, do they show her in the big chair?
I wonder if the design was consciously influenced by the Morlocks in the 1960 film adaptation of The Time Machine. The greenish color and the hair are somewhat reminiscent. And like the Morlocks, the M-113 creature is a degenerate remnant of a collapsed civilization. Maybe the species even looked different hundreds of thousands of years before.I was thinking I'd like to know a lot more about the M113 race - so maybe a prequel, perhaps even when the Crater's first arrive, and an opportunity for the Salt Vampire to actually be talking to them, rather than simply be deceptive as it became when the Enterprise arrived.
In TOS-R it would have been entirely possible to make one of the other Starfleet starships seen as a different class of ship—possibly a forerunner to the Reliant design seen in TWOK. It could even have been the Constellation or Defiant and without worrying about the interior sets being the same as the Enterprise. Or they could simply have inserted another ship design in the background somewhere. One more Starfleet starship design, for a bit of variety.

It might have been interesting if TOS had done something like TNG’s “Lower Decks” story where Scotty, Uhura, Sulu, Chekov and Chapel were the feature characters.Another thing I would have like to see was at least one episode where Uhura and Sulu each got to be the center of attention.
