It's more in the general feel and ambiance. TOS replicated a naval setting and nautical life and transplanted it to space. The others didn't really.

Looks like the Shenzhou bridge is getting repurposed. Maybe as part of this "upper floor plan" seen in one of the screen caps. Said bridge was already a two-story set to enable filming from the outside as the bridge on that ship was on the bottom of the saucer; now they've removed the whole center section and filled in a lower deck. Still looks like a bridge though. Interesting.
