Discovery starts shooting on January 24th

I would hope in this case "production" means "filming". Production has been well under way for quite a while now.
 
Hopefully we don't get sucked into an anomaly first.

It's about time something happened. Now let's get some more news!
 
Barring any unauthorized paparazzi-style photos, I'm inclined to think CBS' Entertainment Tonight will probably give us the first official look at the cast and sets not long after filming starts. They've kind of done that for every Trek series since DS9 (or maybe even since TNG).

What's been going on for months is "pre-production"

Development: Breaking story, writing the series bible, getting network approval/funding
Pre-Production: Hiring crew, casting, costume/set design, scouting location, rehearsals, storyboarding
Production: Shooting
Post Production: editing, ADR, Visual and special effects, score, foley, color correction
 
I remember the first still of Patrick Stewart in uniform on the bridge of the Enterprise. Richard Arnold had it as a slide in a presentation on the show at a convention in July of 1987.

Great fun.
 
So shooting from January 24, 2017 through September 7, 2017. I don't get this. If we have the latest possible May release date, that would be May 31, a 13 episode run considering the pilot is considered 1 episode the first season will end on August 23. So why shooting until September 7? And from January 24 to the series premiere in May 31 we already have about 20 weeks of shooting that should be more than enough for the first season of 13 episode in a TV series. So my guess are:
- they will be shooting season 1 as season 2 as well for an earlier release for season 2 (maybe January 2018?)
- there will be a longer hiatus in the shooting so we will have a season broken in 2, like 6 and 7 episodes or something.
- this is really the time they need to shoot so the May premiere will be pushed back again to maybe beginning July or once again the first season will be cut in 2 episode blocks.
- fourth option?
 
I guess the fourth option would be "safety net." I like your back-to-back season idea, though. That would make up for the delay in season 1.
 
Fingers crossed we're all still here four days into the new POTUS administration. I mean, Day One and basically a Nuclear War might've just started with a tweet.
