And I can´t believe, no one quoted this great bit of dialogue from "Balance of Terror" yet:

KIRK: I wish I were on a long sea voyage somewhere. Not too much deck tennis, no frantic dancing, and no responsibility. Why me? I look around that Bridge, and I see the men waiting for me to make the next move. And Bones, what if I'm wrong?
    MCCOY: Captain, I ...
KIRK: No, I don't really expect an answer.
MCCOY: But I've got one. Something I seldom say to a customer, Jim. In this galaxy, there's a mathematical probability of three million Earth-type planets. And in all of the universe, three million million galaxies like this. And in all of that, and perhaps more, only one of each of us. Don't destroy the one named Kirk.

I just love that. And for another one, look at my signature :)

Good one. Another TOS line that I always felt was just as heart wrenching: From "City on the Edge of Forever"

Spock: He knows, doctor. He knows.

"Shut up. Shhh, shhhh. Well what do you know? I finally got the last word." Dr. McCoy :p

    "NCC 1 7 0 1, no bloody A, B, C, or D!" Scotty :p

    - Search For Spock. -

    Excelsior: Level please?
    Scott: Transporter room.
    Excelsior: Thank you.
    Scott: Up your shaft.

*Kirk holds up his hand in Vulcan salute.*
Kirk: How many fingers do I have up?"
McCoy: That's not very damn funny.

McCoy: Are you just going to walk through them?
    Kirk: Calm yourself, doctor...

Kirk: I...! Have had...! Enough of, YOU!

    - Star Trek VI -

-After Kirk makes out with the girl.-
McCoy: What is it with you, anyway?
    Kirk: Still think we're finished?
    McCoy: More than ever.

Spock: If I were human, I believe my response would be.... Go to Hell. ...If I were human.

    - Trouble With Tribbles -

Chekov: I was making a little joke, sir.
    Spock: Extremely little, ensign.

    - Errand of Mercy -

Kor: I don't trust men who smile too much.

I'm having fun with this. Here's another of my favorites, from "The Ultimate Computer":

Spock: Computers make fine and efficient servants, but I have no wish to serve under them. A starship also runs on loyalty to a man; one man. And nothing can ever replace it. Or him.

You beat me to the punch. Possibly my favorite line from TNG.

Another good one, from "Amok Time":

"You may find that having is not so pleasing a thing after all as wanting. It is not logical, but it is often true."

    A good one from TOS:

I'm a longtime TOS fan, but my absolute favorite line in all of Trek belongs to Jean Luc Picard:

Let's make sure history never forgets...
    the name...
    Enterprise

    Kirk, in Return to Tomorrow:
Risk? Risk is our business! That's what this starship is all about..That's why we're aboard her!

Also, Edith Keeler's speech from City on the Edge of Forever, some of which you can read in my signature. These last two pretty much sum up the entire franchise, in my opinion.

    From TOS Requiem for Methuselah:

MCCOY: You wouldn't understand that, would you, Spock? You see, I feel sorrier for you than I do for him because you'll never know the things that love can drive a man to. The ecstasies, the miseries, the broken rules, the desperate chances, the glorious failures, the glorious victories. All of these things you'll never know simply because the word love isn't written into your book.

+1 to this. Annorax FTW -- one of my favourite villains, VOY or otherwise, Trek or otherwise.

"Fate: protects fools, little children and ships named Enterprise."
    - Riker, "Contagion"

The whole bit where Kirk was trying to get Scotty to explain why he threw the first punch in "Trouble With Tribbles".

Chang: "'To be or not to be?' That is the question which preoccupies our people, Captain Kirk. We need breathing room!"
    Kirk: "Earth, Hitler, 1938."

    Chekov: Course heading, Captain?
Kirk: Second star to the right, and straight on 'til morning.

I'd like to throw in the closing statement itself. :techman:

Well this thread is a lot of fun :)

How about this exchange from STTFF:

KIRK/McCOY: 'Row, row, row your boat gently down the stream merrily, merrily, merrily, ...merrily, life...'
KIRK: Come on, Spock? Why didn't you jump in?
SPOCK: I was trying to comprehend the meaning of the words.
McCOY: It's a song, you green-blooded a Vulcan. You sing it. The words aren't important. What's important is that you have a good time singing it.
SPOCK: Oh, I am sorry, Doctor. ...Were we having a good time?
McCOY: God! I liked him better before he died.

Actually I love those campfire scenes. And another of my favorites from the same movie:

KIRK: There's got to be a way out of this mess.
SPOCK: This is a new brig, Captain. It is escape proof.
    KIRK: How do you know?
SPOCK: The designers tested it using the most intelligent and resourceful person they could find. He failed to escape.
KIRK: This person? He didn't by any chance have pointed ears and an unerring capacity for getting his shipmates into trouble, did he?
SPOCK: He did have pointed ears.

Yes, I am one of the few who like "The Final Frontier" ;)

I always liked this exchange, at the end of TSFS:

Sarek: Your shipmates are people of good character.

    Spock: They are my friends.

Q: What must I do to convince you people?!?
    Worf: Die.
Q: Oh, very clever, Worf. Eat any good books lately?

    Data(singing): Life forms.... :D

Worf: Sir, I protest! I am *not* a merry man!

    Worf: (smashes mandolin) Sorry.

Most of the best ones have been mentioned. I always loved this exchange in "Our Man Bashir".
Bashir: I work for one of the nation states of this era, Great Britain, which is battling various other nations in what is called the Cold War. This apartment, my clothes, weapons, even my valet were provided to me by my government.
Garak: I think I joined the wrong intelligence service.
