I had planned to make stuffed past last night. You saute onion and mushroom and zucchini along with some ground beef, and stuff them into canneloni tubes. Cover them with spinach and and cheese, then bake them. I was going to prep it in advance and just bake it when the time came.

At about 7:30, I hadn't moved from the couch yet. So I punted and we got Chinese instead.

After days and days of variations on turkey leftovers (which I love), it was time for something different. Made Black bean soup with chorizo (using the stock I made from what was left of the aforementioned turkey), accompanied by sour cream and corn bread. I hadn't made the soup in several years and, if I do say so myself, it turned out damn good, and SO easy: just threw it in the crockpot in the morning and let it go all day. Made my neck sweat when I was eating it, but that's the way good black bean soup should be: somewhere between "peel the skin off your lips" and curl your toes.

Since it was just the two of us for Thanksgiving, I made a roaster chicken since a turkey would be overkill. I stripped the meat off the bones the next day, took the giblets I held onto, and the drippings from the roasting pan and made chicken stock out of it. Let it simmer all day.

Threw in some veggies and the leftover chicken later on and had at it.

It came out nicely, and had a little different feel than typical chicken soup. When I roasted it initially, I stuck clementine sections under the skin, and stuffed a load of cranberries up its butt. I kept them in the stock (they basically dissolved in the oven anyway), so the soup had a hint of a tart fruit taste to it.

Last night we had my best friends graduation dinner (he graduated with his BA in Electrical Engineering on Thurs) at Montana's and so I had a BBQ Beef Brisket that was one of the best I've had there ever along with Mashed potatoes. Had cake for desert back at his place.

Last night I cooked some breaded chicken breasts with mushrooms, in lemon-pepper and garlic. Very tasty. Also made some rice and salad with creamy Caesar dressing.

Tonight, I made boneless leg of lamb (which freaking FOREVER to cook!) with greenbeans, and left-over pumpkin pie for dessert. (hubby made two pies for Thanksgiving, so we had LOTS of leftovers).

Tonight I made a really lovely soup. I am an expert at soups. This one is full of wintery vegetables: butternut squash, zucchini, daikon, turnip, parsnip, carrot, and of course, the "holy trinity" of celery, pepper, and onion. It is a little bit sweet with a hint of cloves. It turned out delicious!
