I deep fried tilapia in a beer batter/grits mixture, and then had it with sun-dried tomato noodles, in a veggie cream sauce. YUM!

I do not, however, recommend using grits as a coating for deep frying simply because they can burn very easily and get quite crunchy. I didn't mind (would make it again this way), but your results may very.
