That sounds delicious. I haven't had eggplant in at least twenty years because sadly, I'm allergic to it. Shame too, as it seems like it could be very versatile and handy in making vegetarian recipes.

Today's spice selection included coriander, cumin, fennel, chilli, paprika, ginger, turmeric, star anise, black pepper, extra fennel (yes I made my own curry paste, and yes I love fennel

A roast tonight. Kind of feels like a winter evening. Cold and overcast. We had turkey pieces, carrots, parsnips, onions, and mushrooms.

Here we had a simple dinner of soup (gulash) and breads with loads of different toppings.
And home-baked cookies with the coffie..

*Almond/cinnamonsugardipped. (mandelkakor)
*coconut "dreams" (cocos drömmar)
*and simple shortbreadcookies rolled in colored sugar (Brysselkex)
