I think it could be from The Search for Spock when Kirk and the gang steal Enterprise out of spacedock.

or

From Insurrection when Picard is trying to make a quiet get away from Enterprise to assit the Bak'u.

As I'm not sure if I'm right with either of them, I'll wait for comformation before I post my own quote.

I was going for Sulu's comment to Kirk in TSFS when the latter decides to go against Admiral Morrow's orders and rescue Spock anyways. But I'm glad I stumped some people!
