Thank you, and no, I haven't had any sauerkraut yet. I've had spicy pickles, but no sauerkraut.

Anyhoo, when it comes to dating, I'll allow just about anything on a first date.

Oh, no I haven't had any since my birthday. I've eaten sauerkraut, the most beloved of all krauts.

Well you just haven't had good cabbage.. I prefer it cooked asian style, in stir fries, in dim sum, in KIMCHI which is absolutely glorious stuff and goes well with beer. A good cabbage is sweet, a lot of people have just had very badly cooked old bitter cabbage. A cabbage should be sweet enough that you eat it raw and it is delicious.

Also, red cabbage. Chopped very thinly, as slaw with just about anything else.

My grandmother used to can her own sauerkraut. I once ate an entire mason jar of it, which was a bad idea, but so delicious.

She was the best. She, and my grandfather, lived on a farm in Kentucky. They grew and canned their own vegetables. Every year we could look forward to mason jars of pickled food: sauerkraut, beets, onions, and of course, pickles themselves. I miss my grandparents, and I miss that sauerkraut. No one else in my family even comes close to making it the same way.

You can just make a couple jars, see how it goes. Sometimes I'm just looking at fruit and get some idea in my head and bam, boiling and bottleing it into something. Doesn't matter if it's just enough for one jar.

How long does it ferment for?

3 days, though some people I've asked said 4 to 5 is best.

Oh! I know you can ferment kimchi for like a couple of years! Days, that's great, you will taste your success without sweating over it

I'd make two basic jars and add something to the second that appeals.

surely you meant supper-happy

Beware the homemade kimchi! My bother makes it and once a jar exploded. A very messy and smelly affair.


Maybe we should add "must be a good cook" to the BF rules list
