Does roe on sushi count? Because that's all I've eaten.

I've heard it tastes salty. Is that true?

Yes, it is Salty, but that is just one of a number of flavors that hit you when you eat it.

Many cute little sturgeon will now never be born. So much potential, snuffed out in an instant. What if one of those eggs was the sturgeon equivalent of Einstein? Now we shall never know.

(Yes, I know the eggs are non-fertile. I'm not going to let that stop me making stupid jokes!)

Yes. And I prefer, personally, the kinds of roe and the methods of preparation found at sushi bars to anything that came from a tin and was served on a cracker or tiny bagel. I love salmon roe served on sushi rice.

Ooo.. well I'd like to try the european caviar some time too. Is the strong flavor in that natural, I always assumed the salt was added?? Sushi roe doesn't have that salt level.

Yeah, sturgeon has salt added directly to it, so a little goes a long way. At the sushi bar, they usually soak the eggs in soy sauce, or a vinegared brine. Still adding salt, but the flavor is more subtle.

I'd agree with this, and I've had some very good caviar in the past too. I think there's a greater complexity of flavour in the various Japanese styles of roe preparation.
