^The magical fruit. Tonight for dinner I made harvard beets. I should have taken a picture, but I forgot. They were very pretty. I use my own recipe since most call for way too much sugar for my taste (and diabetes). Boil enough beets to yield four to six cups cubed. Make a sauce of 1/3 cup white vinegar, 1/3 cup water, 3 tablespoons butter, 4 tablespoons sugar (though I do half Splenda to reduce the sugar -- most recipes call for 3/4 cup!), salt, pepper, and a bit of cornstarch. Coat beets and chill. Pure, sweet, heaven.
