Here's one I found somewhere from the Andorian Arc in Season 4. Connor and the guy who played the Romulan Commander. He was also one of the aliens in the X-Files, I think. Both are from Washington State, Connor's Home town.
i remember having read a paper, which said connor was very happy to work with him on enterprise. he was a big fan of him because brian was a celebrity in his native town.

I finally found the picture I was looking for. Astronauts Terry Virts and Mike Fincke did cameos as members of Trip's engineering crew in TATV. They were visiting the Enterprise set while on vacation and were invited to be on the show. (Their name tags read "T. Virts" and "M Fincke." ) Fincke just finished his second tour on the ISS as half the crew of Expedition 18, and Virts is currently working as the lead Ascent and Entry CAPCOM at Mission Control.
