I'd like that video food a lot more if it was on tortilla chips rather than frozen mushy fries. Then again there is the wondrous appeal of poutine.. so maybe the fries can stay.
I had some of those at Frankie and Benny's last week. Then a Pizza, and a cheesy garlic bread. I think I'm approx. 60% cheese and meat products now, the other 40% is bread products.

I've used to use bacon in nachos all the time--a combination of bacon and shredded chicken. They were always a big hit. People usually expect beef with their nachos, but I've always found beef underwhelming for the task. Shredded beef (from a steak or roast) is always too dry and bland, and ground beef is just too greasy and makes the chips soggy. But shredded breast meat (marinated) and smoked bacon really compliment each other and don't ruin the tortillas.
I rarely mix meat with nachos. I have pretty simple tastes when it comes to what I put on top of my nachos and the things I dip them in, and nine times out of ten I'm perfectly content with cheese, salsa or hot sauce. Meat only very rarely touches one of my nacho chips.
I save all the meat for fries, tacos, wraps and sandwiches. Nachos are a cheese, sauce and salsa thing for me and pretty much always have been except for rare occasions. My diet's questionable enough as is. If I start piling shredded or chunk meat on my nachos I'll be dead of a massive coronary in a matter of days.
