Orzo with cherry tomatoes, peppers, and onions with feat cheese. 15 minutes top and so so good. Also eggplant sandwich - Toasted roll with pan fried really thin eggplant, then some tomato slices, peppers and onions with cheese all toasted in goodness.
fried eggplant is amazing! if you like curry, bigdaddy fried eggplant can make a nice accompaniment. i'm currently eating a homemade bacon sandwich and drinking a coffee from my favourite coffee shop. bacon sandwich = simple, satisfying comfort food
