T'Pol. She seems more likely to just turn and walk away from you if she felt the argument was going nowhere. Plus, I think she'd be easier to rattle than Tuvok. He was much more centered and much harder to mess with. Would you rather be sentenced to living out 5 years in a holodeck version of TOS, TNG or DS9? (with the safeties off, of course)

I would much rather listen to Quark and be amused by it rather than listen to Worf drabble on about his honor. Although Worf MIGHT be able to bust us out of those chains. Would you rather have your clothes tailored by Garak or your drink made by Rom?

Station might seem safer, but a ship would be way more exciting. Would you rather have to take care of Alexander for a week or take care of a young Nog for week?

Neelix: both are gentle, but Neelix speaks more quickly, so the scolding would be over sooner. I have to go with the TV universe: fewer complications, more likely that I won't be written off next week. Captain Pike is easy on the eyes but he'd find a way to escape and get the hell away from me. I'd go with Jose Tyler. He was pretty cute and more likely to settle. TOS Spock would not make much of a romantic partner.
