Speaking of Enterprise races in the 24th - and even 23rd - centuries...are there any Suliban in the Trek novels set in those time periods!?

^ There's mention of some Suliban settling on the planet Tiburon (in Titan's "The Red King") but I'm not aware of any other appearances.

A Suliban member of the DTI plays a fairly significant role in Watching the Clock.

From Memory Beta:

Prior to 2379, several Suliban had settled on Tiburon and were later joined by several Vanoben. The Tiburons themselves did not mix with the Suliban settlers. (TTN novel: The Red King)

I've been kind of disappointed that the Denobulans are the only Ent. species that have played any kind of a prominent role in the 24th century stuff.

^Agreed. I'm actually surprised the Andorians haven't shown up more often prior to the TP novels, but it looks like they're finally getting some exposure.

The Andorians have made a few appearances in the 2010-2012 "Starfleet Academy" series.

Speaking of which there was a strong Andorian character in "Capture The Flag" from the 90's Starfleet Academy series.
