I believe the appropriate phrase is 'Boom, headshot'. That's pretty much it right there.

We know that, on multiple occasions, the Borg have been defeated by humans. It takes a Time Lord to defeat the Daleks. Therefore humans are superior to Borg, Daleks superior to humans.

This sounds like a contest between two supposedly terrifying foes who are continually being undermined by writers who need them to lose.

Perhaps, but the Borg are supposed to be more advanced than the Federation, whilst the Time Lords are supposed to be more advanced than the Dalek's.

So in once case we have an alleged superior race (the Borg) being defetaed by a supposed inferor race (The Federation).

And in the other we have a supposed more advanced race (The Time Lords) defeating an supposed inferior race (the Daleks)

One would expect the more advanced race to come out on top.

Actually seeing as the Daleks have something similar to nanoprobes and they also have a device that can block them I don't see why it couldn't be adapted to block Borg nanoprobes, so they wouldn't be reliant on just their casings.

I don't think we know enough about how Dalek nanogenes work in comparison to how Borg nanoprobes work to presume that the same technology that neutralizes the former could neutralize the latter. But you're correct in noting that this would be another relevant factor in determining Dalek susceptibility to assimilation.
