Beef Pot Roast

First time using a slow cooker to make Pot Roast. It came out fantastic!

My Mom is never going to be confused with an Iron Chef, but she makes the best pot roast going. The key is to use white rather than red wine.

My youngest daughter asked me to make her favorite Chicken Scampi so I gave it a go. I fed all my kids and friends last night with plenty left over.

Needless to say, Tori won't be going to Olive Garden for her Scampi fix anymore

Ended up having terrible instant Thai noodles because I bought the wrong brand. They were seriously tasteless and I nearly ended up tossing them out.Worst dinner of the year so far!!

I finally made these potato pancakes

I grated four potatoes and one onion. Into the batter goes garlic, eggs, salt, flour, oregano, and basil. The actual batter doesn't look so good but boy oh boy are these delicious (served with sour cream)

Looks great. There's seriously no better tool for a roast (be it beef or pork) than a slow cooker. Also great in a crock pot? Chili, spare ribs, soups, sauces and chicken wings.
