    Chicken salad. Simple, but tasty.

A very simple spaghetti bolognese (it's not elegant, but I love it -- really disappointed that my parmesan had gone off, though!). Diet Pepsi.

You don't have to be elegant to have an awesome dinner. Pasta with bolognese is one of my fallback, "don't have enough time / energy to cook anything else" foods.

I hear you about the parmesan, though. :( I buy small wedges of it from the Farmers' Market and I have to be vigilant about freezing it.

It can last quite a while if you place it in a resealable bag immediately after opening. In fact, everything that can be resealed often is in our fridge! A necessity if there's only two of you and it can take some time for things to get eaten.
