    Last night, we went to Macaroni Grill with my mother in law. I'm supposed to be a high-iron diet, but the only red meat dish hubby would let me order was the spaghetti and meatballs. It made me ill.

    No one has had dinner in a week? ZOINKS!!!! I had left over pizza last night. Had an eventful weekend and was barely home so I didn't feel like cooking anything.

    Made bean soup tonight. I replaced the chicken broth my recipe called for with vegetable broth to make it a vegan meal.

    I soaked all the beans I used for about 30 hours, and simmered the soup for about four hours because the last time I made a different bean soup the beans were quite hard.

    It was excellent.

    Yakanuki satays from Whole Foods. YUM.

    Hubby grilled them up and even did the dishes, too.

    Easter dinner at my parents house. Roast Lamb, Roast Beats, potatoes, turnips and carrots. We had homemade Coconut Cake for desert.
