Well, a baby carrot is an adult carrot, which is probably why it tastes like one.
Baby carrots are unsellable carrots that have had all the weird, damaged, or rotten bits whittled off to make them pretty again. I think it's a great, personally, as before all the wonky carrots were just chucked. Plus, they're delicious.
