I made veggie lasagna on Sunday, since I had to pick my wife up in the evening from the airport. Did all the prep, but didn't throw it in the even. She was tired and didn't feel well, so I made it last night instead. I made it with tons of cheese, mushrooms, zucchini, yellow squash, onions, and eggplant. There's a load of it left for the week.
Tonight might be a lentail salad, my wife gets moist over lentils.
