I'd find it more fun to discuss a plot that doesn't have to "reboot" or "invalidate" anything already established myself. I think a second movie should juxtapose Xavier recruiting more X-Men and Magneto recruiting mutants for his Brotherhood. Once again focusing on their relationship but this time the start of them being enemies.
