It was my folks' last in town; we were tired of doing "the restaurant tour of New England". I asked what they wanted, and my dad said "meatloaf". Who knew? Fortunately, I already had one in the freezer.
So, we had meatloaf with baked potatoes and a salad with lots of veggies from The Hubby's and his mother's gardens. The folks were thrilled. I make this "topping" from diced tomatoes, brown sugar, balsamic vinegar, etc., that I bake onto it. My dad gave me the best compliment (for him), saying it was so good he wasn't even tempted
to use ketchup.
