My mother is going to make a zucchini casserole tonight (I think there will be onions and a few other veggies). It should be delicious. I can't wait.
Her step-sister grew some gigantic zucchinis in her garden (HUGE) that we're going to use.
However, I'd kill for some of these right now:
Bacon-wrapped jalapeņos stuffed with cream cheese and baked. Possibly my most favorite food ever. Especially when they get that slightly burnt look and the gooey cream cheese soaks up all that jalapeņo and bacon flavor. Sin on a toothpick.
